Recently, the USDA announced significant updates to its regulations regarding salmonella in poultry products.
On July 29th the USDA released an updated proposed rule that would require all raw poultry introduced into commerce to have less than 10 cfu/g of salmonella. Furthermore, raw poultry would be prohibited from containing any level of salmonella serotypes that are of public health concern. This proposal follows a final rule announced in April, which established a limit of no more than 1 cfu/g of salmonella in raw breaded and stuffed poultry products.
