What is Salmonella and why is it a concern?

Salmonella is a pathogenic bacterium that affects the intestinal tract by causing an infection called salmonellosis. They are common to animals and birds, naturally living in their intestines. However, when humans consume this bacterium, it can cause nausea, vomiting, abdominal cramps, and fever. Salmonella is one of the most common causes of food borne illnesses.

Since the bacteria is naturally present in livestock, pests, raw ingredients and even dirt/soil and water, it is crucial that your team is trained on proper cleaning and sanitizing procedures, handwashing, and contamination prevention. This all should be in your HACCP plan with details on specific approaches to help prevent salmonella contamination.
