Listeria bacteria may be found in a variety of cheeses. Seeing as the listeria bacteria causes serious foodborne illnesses, all cheeses believed to carry excess listeria may not be sold according to law, as this could lead to health impacts for the consumer.
Raw milk soft cheeses contain listeria at a higher frequency than other cheeses. This bacteria can enter a food through a variety of ways, such as during the milking process, through environmental contamination, or through recontaminations. Also, bacteria can enter the food due to improper manufacturing or storage processes.
Listeria can cause nausea, vomiting, diarrhoea, and general flu symptoms. For pregnant women, children, or immunocompromised people, this bacteria lead to serious progressions or health risks.
In the EU, Regulation (EC) No 2073/2005 establishes analytical procedures a company must adhere to in order to not exceed the safety limit of listeria in food products.
As listeria is potentially dangerous, it is important that the aforementioned critical limit is not exceeded.
